Home made Pizzas in under 30mins!

So we’re well past the weaning stage now with Evander just turned 19 months. I will go back and finish a bunch of unfinished blog posts I have on weaning and recipe reviews at some point.
I’ve seen a few bits online recently that have encouraged people to just post rather than not spend ages on trying to perfect a piece and never actually finish it (very relevant to the non completer-finisher in me!!)
So going to try and make it a goal to post something once a week.

I’ve followed ‘What Mummy Makes’ on Instagram for a while and was delighted when she (Rebecca Wilson) announced a book last year. I had a bunch of her recipes screenshotted and saved in my phone so was really looking forward to trying out some new ones.
We’ve now tried LOADS of her recipes and none of them have disappointed. In fact, when i’ve made them for my parents too, they’ve really liked some of the recipes and used them for cooking for friends (no children present). The recipes really are tasty and friendly for all, unlike some other kid friendly recipes i’ve tried that just end up a bit bland and you want to chuck a load of salt at!

So lunch time today we had a go at the pizza recipe. It was supposed to be courgette and cream cheese topping but we didnt have courgettes so just used the recipe for the dough and did our own toppings. I do want to go back and try the original recipe though!

I’ve got Evander involved in baking a few times now so was keen to get him to help out! I pre-measured the ingredients (at only 3 this was quick and easy!) and set out a big mixing bowl and spoon for him. Measuring the ingredients out and putting them into seperate bowls for him did mean an extra bit of washing but it meant that i knew we were going to get the right measurements! He enjoyed spooning the flour and greek yoghurt into the bowl and then liked mixing it up!

It quickly came together and he was happy for me to form into circles, whilst giving them the occassional ‘pat pat’. We had some leftover pasta sauce from the previous night so we spread some of that on the base then he loved sprinkling some cheese over. He’s an absolute cheese fiend so I was shocked to watch it go on to the pizza and not one single bit in his mouth!

We sprinkled a bit of oregano on the top and popped them in the oven for 10mins. So simple and quick and you could definitely have them prepped and cooked in 20mins if you were doing it minus a toddler!!

The finished pizzas were so good! Lovely and soft and spongey with a bit of crunch on the crust. We cut into fingers and Evander couldn’t shove them in his mouth fast enough.

We’ve already planned to make them again this week and I think we’ll do a variety of toppings.
It would be a great family activity or great for kids of all ages to choose their own toppings!
